Build-up of grease in restaurant ducts can lead to catastrophic results!

Just about everyone knows that grease is flammable. In restaurants, grease can accumulate rather quickly in the hood filters, exhaust ducts and on the exhaust fans. If this grease is not cleaned regularly, fires can occur. While we don't know for certain whether the fire that destroyed Le Chateau a Pape was caused or aided by grease in the exhaust system, there was a history of problems with their system prior to the fire according to the National Post.

It is not the first time the restaurant burned. In 2005, a fire reportedly started in an oven around suppertime on a Monday, and spread to the exhaust vents before sprinklers put it out, prompting a fire prevention officer to close the restaurant until they removed a grease buildup.

"I was not impressed with the shape the kitchen was in, the buildup of grease, " the officer said. "They didn't keep up service on their appliances."

I actually had reservations for my wife and I at Le Chateau a Pape for the night following the fire and was really saddened to see it was gone.
